Hindel's Apple Cake
Need comfort food, but in a time bind? This cake, from my sister Mrs. Hindel Levitin of Palm Beach, Fla, is a real winner!
Ingredients:
-1 cup oil
-2 cups sugar
-3 eggs
-1 teaspoon salt
-1 teaspoon baking soda
-3 cups flour
-1 teaspoon vanilla extract
-3 cups peeled, cored and cubed apples
-1 teaspoon cinnamon
Directions:
Preheat oven to 350.
Beat oil and sugar.
Add eggs, salt, baking soda, flour, and then vanilla.
Batter will be stiff.
In separate bowl, toss cubed apples and cinnamon until apples are fully coated.
Stir apples into batter, then scoop into greased bundt pan.
Bake uncovered for 1 hour.
Cool completely before removing from bundt pan and cutting.
