MAJESTIC AND MOIST HONEY CAKE

 

 Ingredients:

-3 1/2 cups all-purpose flour

-1 tablespoon baking powder

-1 tablespoon baking soda

-4 teaspoons ground cinnamon

-1/2 teaspoon of each:  ground cloves, ground allspice, Kosher salt

-1 cup vegetable oil 

-1 cup mild honey (such as clover)

-1 1/2 cups granulated sugar

-1/2 cup light brown sugar, packed  

-3 large eggs at room temperature 

-1 tsp. vanilla 

-1 cup warm and flat ginger ale

-1/2 cup fresh orange juice

-1/4 cup very strong cooked tea 

-1/2 cup slivered almonds

 

Step 1: Preheat oven to 350 F.

Step 2: Generously grease TWO 9x13 pans with canola oil

Step 3: Whisk together flour, baking powder, baking soda, salt, cinnamon, cloves and allspice. 

Step 4: Make a well in the center. 

Step 5: Add oil, honey, both sugars, eggs, vanilla, ginger ale, orange juice and tea using a strong wire whisk or electric mixer on low speed, stir until thoroughly blended.

Step 6:  The batter will be thin, spoon batter in pan. 

Step 7: Sprinkle evenly with sliced almonds. 

Step 8: Place pan on two baking sheets, this ensures cake bakes properly. 

Step 9: Bake until cake springs bake to touch, 60 to 75 minutes, let cool 15 minutes before removing from pan.
