Apple-Pepper Salad

This salad is a wonderful addition to your Rosh Hashanah table, with its colorful apples and peppers.  The toasted coconut adds a sweet, exotic flavor.  If you are making this in advance, squeeze the juice of half a lemon on top of the cut fruit and vegetables.  It will keep the salad from turning brown, and add great flavor!

-1 yellow apple (unpeeled)
