Vodka Cake
My sisters have been making this cake for years. I decided to make it recently, and half-way through with the mixing, I realized that I didn't have Amaretto! Since Amaretto is almond-based, I substitued it with 1 teaspoon of pure almond extract, and I think it came out even better this way!
Ingredients:
4 eggs
2/3 cup oil
3/4 cup orange juice
1/4 cup Vodka
1/4 cup Amaretto OR 1 teaspoon pure almond extract
2 tsp. baking powder
2 cups flour
2 cups sugar
1 package instant vanilla pudding
Confectionary sugar for dusting.
Directions:
Preheat oven to 350.
Combine all dry ingredients and mix.
Slowly add liquid ingredients to dry ingredients and mix until silky smooth.
Pour into bundt pan.
Bake one hour.
Remove cake from bundt pan.
When cooled, dust with confectionary sugar.
