Cream of Asparagus Soup

This soup looks and tastes great, thanks to the use of both green and white asparagus.

 

Note: Serves 30

 

-6 quarts chicken soup or vegetable broth

-1/2 cup oil

-1 cup flour

-1 1/2 cups enriched soy milk

-1 1/2 teaspoons garlic powder

-4 lbs. fresh white and green asparagus spears, washed well and chopped

 

-Bring the broth to a boil.

-In a small saucepan, brown flour in oil.

-Add to boiling soup and stir well until smooth.

-Add remaining ingredients and cook for 20-25 minutes.
