Potato Leek Soup
This is a great comfort food on a cold winter day. You can "stretch out" the soup a bit by adding more broth, but don't add more than a cup or two, or you will loose the creamy flavor.
Ingredients:
-4 tbsp. butter (or margarine)
-3 heads leek (1 bunch) cleaned well
-2 potatoes
-1 carrot
-2 stalks celery
-1 cup of broth
-1 tsp. salt
-1/2 tsp. pepper
-3 cups milk (or soy milk)
Directions:
-Chop all vegetables.
-Melt butter in pot, and add all the ingredients, except the milk.
-Bring to a boil, then lower the flame to a simmer.
-Cook for 30-45 minutes, or until the vegetables are tender.
-Blend with a hand blender or food processor.
-Add the milk to blended soup and mix well.
-Reheat before serving.
