Baked Zucchini and Yellow Squash
Five large zucchinis
Five large yellow squash
Light Olive Oil
Oregano
Italian Seasoning
Salt
Pepper
Preheat oven to 350. Wash unpeeled zucchinis and squash well. Slice lengthwise into strips of desired thickness. Arrange in large glass baking dish in one layer. With a pastry brush, smooth olive oil onto each strip. Sprinkle with oregano, Italian seasoning, salt and pepper. Grill them OR bake uncovered, remove after 20 minutes, or when the top is just starting to get crispy brown. The strips will be firm but moist and soft inside.
